About the Recipe

Ingredients

1 whole cinnamon stick - 6 green cardamom pods - 3 whole cloves - 2.5 cups water - 2 tbsp slices of ginger (optional) - 3 tbsp loose leaf black tea (or 3 tea bags) - 2 cups of any milk - sweetener or sugar

Preparation

  1. Slightly crush the cinnamon stick, cardamom pods and cloves using a pestle and mortar, or on a chopping board with a rolling pin. You only need to crush them slightly to release the aromas.

  2. To a saucepan add crushed spices, water, and optional sliced ginger and bring to a boil over high heat. Then reduce heat slightly to medium-low and maintain a simmer for 10 minutes or until it reduces by about one-third. Add tea (loose leaf or bags) and milk of choice and lower heat to low. Cover and continue cooking for 5 minutes. Then turn off heat.

  3. Add sweetener or sugar of choice to taste. Strain before serving.
