Masala Beans Jacket Potato

Ingredients

1 can of baked beans - 1 onion - 1 green chilli - garam masala (1 tsp) - handful of coriander leaves - 2 large potatoes - salt - pepper - turmeric (1 tsp) - vegetable oil - butter

Preparation

  1. Preheat the oven to 200C/400F/Gas 6.

  2. Wash the potatoes well, dry them and prick several times with a fork.

  3. Add some vegetable oil and rub into the potatoes, then sprinkle the salt, pepper and turmeric powder over them. Place onto a baking tray and bake for 1 hour - 1 hr 30 minutes, depending on the size of the potato. When cooked, the potato should be golden-brown and crisp on the outside and a fork should slide in very easily.

  4. 20 minutes before the potatoes are ready, dice the onion and fry in a little oil, for 10 minutes, until golden brown. Add dashes of water to stop burning.

  5. Slice a green chilli lengthways, deseed and then chop finely. Add this to the pan.

  6. Add the garam masala, salt to taste. Fry for another minute.

  7. Add the can of baked beans and warm through. Add a handful of coriander.

  8. Carefully remove you potatoes from the oven and cut them open. Add a bit of butter, season as required and add half the masala beans to each of the potatoes.

  9. Add a little sprinkle of cheese if you're feeling naughty!
